1 mini muffin tin
Ingredients

ripe banana
or 1 cup applesauce
1
cup
quick oats
1/2
cup
grated zucchini, drained of liquid
or grated carrot
1
tsp
baking powder
1/4
cup
chopped raisins or chocolate chips
optional
Instructions
Preheat oven to 350°F (175°C) and grease a mini muffin tin.
Mash bananas or mix applesauce in a bowl. Stir in oats, grated veggies, baking powder, and optional mix-ins.
Divide the batter evenly into the muffin tin.
Bake for 12-15 minutes or until a toothpick comes out clean.
Cool for 5 minutes before removing from the tin.
