BLW Mini Zucchini Muffins

Bake muffins using banana or applesauce as a sweetener. For extra nutrition, add oats or grated veggies. I also have a recipe for iron-rich avocado blueberry mini muffins.

Equipment

  • 1 mini muffin tin

Ingredients
  

  • 2 ripe banana or 1 cup applesauce
  • 1 cup quick oats
  • 1/2 cup grated zucchini, drained of liquid or grated carrot
  • 1 tsp baking powder
  • 1/4 cup chopped raisins or chocolate chips optional

Instructions
 

  • Preheat oven to 350°F (175°C) and grease a mini muffin tin.
  • Mash bananas or mix applesauce in a bowl. Stir in oats, grated veggies, baking powder, and optional mix-ins.
  • Divide the batter evenly into the muffin tin.
  • Bake for 12-15 minutes or until a toothpick comes out clean.
  • Cool for 5 minutes before removing from the tin.
