An eggplant showed up last week in my SPUD fresh harvest box. While my kids thought the eggplant was a funny looking veggie, I was stumped with how to cook it. I gave up eggplant a few years ago, after an unsuccessful eggplant parmesan! So I headed over to my Instagram feed and got some great ideas.
First of all, a number of people suggested slicing or chopping the eggplant, sprinkling with with salt and letting it sit for 30-60 minutes. This will draw out some of the water, so the final dish isn’t too soggy. Then brush off the salt. I decided to rinse the eggplant in a colander instead, but will try the brush-off next time. The rinsing didn’t remove a lot of salt, so the final product was a bit salty. And wet, which I think defeated the purpose of salting to remove moisture!
Recipe suggestions using the eggplant in moussaka, ratatouille, grilled as part of a quinoa salad, as a pizza base (awesome idea, definitely going to try this one! Thanks Wean Green!), baba ganoush, roasted and then incorporated into eggplant paremesan, turkey burgers & thai green curry.
I decided to roast the eggplant with some bell peppers and veggies (because roasting makes ALL veggies taste yummy!), and added a homemade balsamic salad dressing. It was delicious! I’m definitely going to be buying eggplant in the future and testing out some of the other amazing recipe ideas.
